Cranberry Coconut Granola


…and a healthy breakfast idea! Breakfast is probably my favourite meal of the day. I rarely leave the house without eating something and drinking coffee. If I’m in a hurry and don’t have time for a proper breakfast, I’m usually cranky until I have time to at least drink a cup of coffee. Plus most of my favourite foods are ˝breakfast foods˝. Cereal, granola, cottage cheese, toast, omelette…with the exception of avocado and green smoothies. You can’t love them all :). Well, I decided to make granola again, as I haven’t made it in ages! And I also made a travel version of cottage cheese and granola for busy days. But first, here is the granola recipe:

1 cup of spelt flakes
1/2 cup of seed mixture
1/2 cup of coconut flakes
1/3 cup of cashews
1/2 cup of honey
1/2 cup of coconut cream
1/4 cup of coconut sugar
2 tablespoons of cranberries


And what now? Just mix everything together! Spread the mixture on tray and bake at 175°C for 45-60 minutes.

For this breakfast, I used around half of a cup of granola, a cup of cottage cheese and cranberries. If you use a mason jar, you can take it to work or college whenever you don’t have time to eat breakfast.


You probably saw that most of the products I used came in a cute packaging with a pink label, decorated with raspberries. All of these products come from a Slovenian online shop Malinca, where you can find many local and organic products, delicious foods and natural cosmetics. I really loved all of the products I used in this recipe, the scent of coconut, the delicious coconut sugar and sweet raspberries. But there was one product that impressed me the most –  spelt flakes. I’ve tried a lot of different ones and these are probably my favourite. I don’t know exactly how I would describe them, but the simplest way to say it is that they are not plain, but full of taste 🙂 .

    1. Haha ej sej prednost pri temu je, da ga lahko kar vnaprej 🙂 Jst tud kdaj spim do zadnje minute pa hitim v službo, pa potem kj pojem med malco 🙂 se trudim čim manjkrat spustit ”ta prav” zajtrk. ampak kakšne dni je treba spat 😀
