Muffins are finally back on my plate. I think I haven’t bake any since my birthday! Looks like I’ve been really busy, and the number of times I decided to buy a muffin in a store dramatically increased. Of course, nothing compares to your own home baked sweets. And when I got some sweet blueberries and raspberries – the forest kind, not the store bought of frozen – I just had to make something even sweeter 🙂
Life’s been pretty busy this summer and I’ve forgot how much energy can one properly prepared muffin give. Okay, sugar and chocolate have something to do with it to, but we all need something sweet in our lives.
1 cup of wheat flour
1/2 cup of wholewheat spelt flour
1 tsp of baking powder
1 tsp of baking soda
1/3 cup of raw unsweetened cocoa
1 1/3 cup of chocolate rice milk
1/3 cup of melted coconut butter
1/2 cup of raw brown sugar
fresh blueberries and raspberries
dark chocolate drops
Mix dry and wet ingredients separately. Stir all together, add blueberries, raspberries and chocolate. Pour into paper cups and bake for 20 minutes at 180°C.
